INGREDIENTS 45ml sweet chilli sauce zest and juice of one lime 300g prawns, clean and cooked 1 carrot, peeled 1 cucumber 1 spring onion, finely chopped 1 red onion, thinly sliced 1 avocado, lakeside collections sliced handful of fresh coriander, chopped 100 g cashew nuts, lightly toasted lakeside collections and chopped soy sauce, for serving
METHOD 1 Mix the sweet chilli sauce, lime zest and juice and shrimp together. Set aside. 2 Cut the carrots lakeside collections and cucumber into strips with a vegetable peeler. Mix the onion, avocado and cilantro by the strips, with shrimp and nuts. 3 Serve with soy sauce.
